Frequently Asked Questions

Can I pick up my kimchi instead of paying for delivery?

Yes! Pickup is available free of charge from our collection points in Cape Town and Johannesburg.

You can collect from:

Cape Town: Edgemead Shopping Centre

Johannesburg: Banbury Estate, Northriding

Once your order has been placed, you will receive an email notification asking you to arrange a suitable collection time with us.

Please note that Mom’s Kimchi does not have a physical walk-in store at our collection locations. This means you cannot arrive at the pickup location without arranging with us in advance.

Pickup is strictly by appointment only. After receiving your availability, we will liaise with you directly and confirm a suitable time for collection at your selected pickup location.

Please do not arrive without a confirmed collection time, as we may not be available to assist you.

How long does delivery take?

Once your order has been placed, we will process it internally on the same day or the next working day.

For customers in Cape Town, Johannesburg, and Pretoria, our courier will usually collect your order the day after it has been processed. Once collected, delivery typically takes place on the same day or the next working day, depending on the courier route and availability.

For customers outside of these main areas, please allow an additional 3–5 working days for delivery.

Because kimchi is sensitive to heat and continues to naturally ferment, we try to avoid sending orders to outlying areas on Fridays where possible. This helps prevent your kimchi from sitting in a courier warehouse over the weekend, which may cause extra fermentation before it reaches you.

We always aim to get your kimchi to you as fresh and safely as possible.

Is Mom’s Kimchi fermented?

Mom’s Kimchi is sold fresh and not fermented. This allows you to control the fermentation level at home based on your taste preference.

How should I store my kimchi?

  • For fresh kimchi: Keep refrigerated
  • If fermenting: Store in a cool, dry area, then refrigerate once ready

How do I ferment my kimchi?

To ferment, keep the kimchi in a tightly sealed container (such as a glass jar) and store it in a cool, dry place until it develops a tangy flavour. Fermentation speed and flavour strength depend on temperature and time. Once it reaches your preferred taste, refrigerate to slow further fermentation.

For detailed steps and best practices, please refer to the fermentation guide on our website.

What is the ideal temperature to store kimchi?

The ideal storage temperature is a consistent 0–4 °C. Kimchi stored at this temperature will ferment much more slowly and last longer in terms of quality.

What is the recommended “best before” guideline?

  • Fresh kimchi: Best enjoyed within 10–14 days in a normal household fridge
  • Fermented kimchi: Best quality within 1-2 months in a normal household fridge. Beyond this, the kimchi becomes increasingly sour and is better suited for cooking (e.g. stews, fried rice, pancakes)

Why does my kimchi taste different after a few days?

Kimchi contains beneficial bacteria that naturally ferment sugars in the vegetables. Therefore, kimchi continues to ferment over time (even when refridgerated). Flavour will become more sour and complex the longer it is stored, especially outside refrigeration. If too sour, we recommend you consume it by cooking it (e.g. stews, fried rice, pancakes).

How do I know if my kimchi has gone bad?

Discard kimchi if you notice:

  • Fuzzy mould on the surface
  • A strong rotten or unpleasant smell (not just sour)
  • An unusually slimy texture

Sourness alone does not indicate spoilage.

Is Mom’s Kimchi spicy?

Our kimchi has a low to medium spice level. Flavourful rather than overpowering.

Does your kimchi contain allergens?

Yes. Our kimchi contains:

  • Fish
  • Shellfish
  • Soy

The listed ingredients for our oyster sauce are: Water, oyster extractives, sugar, salt, flavour enhancer, thickener, fructose-glucose syrup, colour, wheat flour, acidity regulator and preservatives.
